Enchiladas!

I made Chicken and Cheese Sour Cream Enchiladas for dinner last night. Oh my goodness gracious were they good!! I think John and I were in complete heaven. Plus the were SO easy!!I got the recipe from my cousin awhile ago and they kinda got put on the back burner......but now that life seems to be back to normal it seemed like the perfect time! I had never even had an enchilada before. I think that made it all the more rewarding.....the fact that it was my first time and I made them and they were delicious! Yay to me ;)

Look at ALL of that CHEESE!! You can't even see where one enchilada begins and one ends. It was kinda like where's Waldo but with an Enchilada!!

About to get eaten! Even the boys cleared their plates! If you haven't had enchilada's before or have but haven't made them, I would suggest you get on it. They are THAT good. Plus you can make they any way you want them. The options are endless!!
